Sowing instructions
To ensure that your Apium graveolens var. rapaceum "Porthos" (celeriac) thrives, start sowing in February or March. Use nutrient-poor potting compost and sprinkle the fine seeds only lightly on the soil. Celery seeds are light germinators - so don't cover them, but press them down gently. Keep the substrate constantly moist, but avoid waterlogging. Place the seed container in a bright, warm place with temperatures of 18-22 °C. The first seedlings will appear after 2-3 weeks. Separate the young plants as soon as they are strong enough and plant them outdoors or in a large planter after the Ice Saints. Make sure they have a sunny location and humus-rich, well-drained soil.
Harvest, use & storage
The tubers usually ripen from September to October. As soon as the tubers have reached a diameter of around 8-12 cm, you can harvest them. To do this, cut off the foliage just above the tuber. "Porthos" has an intense, aromatic flavor and a fine texture. Use the tubers fresh in soups, stews or pureed as a side dish. The leaves are also a wonderful seasoning herb. Ideally, you should store the harvested tubers in damp sand in a cool, dark cellar. This will keep them fresh for several months.
Tips and tricks
- Fertilize: Provide your plants with a low-nitrogen, potassium-rich fertilizer regularly during the growing season.
- Care: Remove weeds regularly and loosen the soil carefully to encourage tuber formation.
- Watering: Celery needs a steady supply of water - growth can stagnate in dry conditions.
- Planting distance: Keep a distance of about 40 x 40 cm between the plants so that they have enough space to develop.

Apium graveolens var. rapaceum "Porthos" is a particularly hardy variety with vigorous growth. It was specially bred for hobby gardeners and is characterized by its good shelf life and intense aromas. The plant belongs to the umbellifer family (Apiaceae) and is not only a tasty ingredient, but also a valuable source of vitamin K, C and fiber.
