Sowing instructions
Growing Cichorium intybus "Variegata di Lusia" is uncomplicated and rewarding. Sow the seeds in spring (April to June) directly outdoors or in a seed tray. Choose a sunny to semi-shady location with well-drained, nutrient-rich soil. Loosen the soil well before sowing and work in organic fertilizer. Cover the seeds only lightly with soil (approx. 1 cm deep) and keep the seeds evenly moist. The first seedlings will appear after about 10 to 14 days. As soon as the seedlings are approx. 5 cm high, you can separate them to a distance of 25-30 cm so that they have enough space to grow.
Harvest, use & storage
The typical, decorative white-red marbled heads ripen in late summer to fall. Harvest the heads when they are tightly closed by cutting them off just above the ground. They are perfect for salads as they add an elegant touch with their mildly spicy flavor. Alternatively, you can blanch the leaves briefly or use them in hot dishes. Store the harvested heads in a cool, dry place - ideally in the vegetable drawer of your fridge. This will keep them fresh for up to two weeks.
Tips and tricks
- For particularly crispy heads, you should water the plants regularly, but avoid waterlogging.
- To enhance the mild flavor, you can blanch the heads by covering them about two weeks before harvesting.
- Change the growing location annually to prevent diseases and soil fatigue.
