Cynara cardunculus seeds - The perfect start for your cardoon culture

The seeds of Cynara cardunculus, also known as cardoon or wild artichoke, are an excellent choice for anyone who wants to cultivate an impressive and tasty plant in their garden. Cardoons belong to the Asteraceae family and are related to the artichoke. Their decorative, thistle-like leaves and edible stems make them a visual as well as culinary asset.

Sowing instructions

Cynara cardunculus is best sown in early spring. Ideally, you should start growing it indoors or in a greenhouse from February to April. Proceed as follows:

  • Soak the seeds in lukewarm water for about 24 hours to promote germination.
  • Sow the seeds in nutrient-rich, well-drained potting compost and cover them lightly with soil.
  • Keep the soil evenly moist, but avoid waterlogging.
  • Germination takes place at temperatures between 18-22°C within 10-20 days.
  • As soon as the young plants are strong enough, they can be planted outdoors from mid-May. Ensure a planting distance of around 80 cm, as cardoons grow large.

Harvest, use & storage

Cardoon stalks are usually harvested in the fall. To make them particularly tender and mild in flavor, a blanching phase is recommended: you can wrap the stalks in dark material (e.g. jute sacks or cardboard) a few weeks before harvesting.

  • The harvested stalks can be enjoyed boiled or braised as a fine delicacy.
  • The flower buds can also be prepared in a similar way to artichokes.
  • To store, wrap the stalks in damp cloth and keep them in the fridge - this will keep them fresh for a few days.

Tips and tricks

  • Cynara cardunculus loves sunny, warm locations and well-drained soil.
  • The plants are perennial, but require winter protection in colder regions.
  • Fertilizing with compost or organic fertilizer promotes vigorous growth.
  • To ensure a rich harvest, you should regularly remove the side shoots.

  • The plant has a long tradition in Mediterranean cuisine.
